OLIVE FRESCHE



When I first saw olives this size, last year, I thought they were damsons! I am going to use Linda's method for curing and preserving them, so am playing "hunt the recipe" at the moment. When I find it, I'll let you all know!

Yes, those are big. On Malta I found it interesting that they lay nets down beneath the trees when they harvest them. I guess that is the norm.

Are you going to preserve them in oil or brine? Will you take the stones out first or even stuff them with garlic or sundried tomatoes?

Hi, Steve. Yes, I've seen the nets on the ground to catch the olives, too.
