This is a recipe which shouldn't work but does and I found it in Frances Mayes's Under the Tuscan Sun [ a much better book than the film that was made of it]. All you do is mix lemon juice, basil leaves, chopped shallots or spring onions and seasoning together and rub the mixture into chicken pieces which you then roast, having sprinkled some olive oil over. I used skinless chicken thighs here but have also used them with the skin on. So simple!

I love lemon with chicken...the both go together so well.
I absolutely love that book. .Her recipes and descriptions of rural Italy made me want to live there in her house,'Bramasole'. Must try this recipe.
Sounds like an excellent recipe to me. I marinate boneless chicken breast in a mixture of lemon juice and olive oil with rosemary before roasting and just a little change will make this instead for something different.
I liked the film Under the Tuscan Sun and somehow had missed reading the book before the film, then bought the book and enjoyed that more.

Looks tasty. I do like chicken, but am fond of the breasts only.
Lee, yes, lemon and chicken are made for each other! Hi, MM. I must reread the book. I did enjoy it the first time. Hi, jmb. Rosemary is my favourite herb and I'll put it with just about everything. I did like the film but thought the book much better. Hi, Steve. You could make this with any chicken pieces.
OK, I'm hungry again now.
That looks juicy, as in soft, tender melt in the mouth stuff.
Bearing no ressemblance to the contents of our fridge.
Oh that looks so good! I`m going to have to see if I can find that book at the library and get the recipe. I loved the movie and if the book is better...all the better!
