A NEW ANTIPASTO



I'm always looking for new antipasti to serve, so when I saw the idea for these in a supermarket magazine, I knew I wanted to try it so I just did: bases and lids made from a paste of chickpea flour, filled with a mixture of pulp from a roasted aubergine, pinenuts, oregano, basil, lemon juice, a few olives, olive oil and seasoning, all whizzed in the food processor and added to grilled or roasted peeled, chopped peppers. [I cheated with regard to these last and used grilled peppers from a jar.] They'd need to be assembled at the last moment for a party, but everything can be made well in advance. I am rather pleased with them.

These look a little like scones.

Is there any similarity, or is just visual?

I thik the idea is similar , Crushed, though these are lighter than scones.

These look very tasty, Welsh and a different idea...it's nice to try new things..and particularly even nicer when they turn out to be as tasty as the recipe depicts. :)

They also look a bit like mince pies. They sound easy enough to cook, how come you never put weight on? Is Simi allowed one?

I remember having tea with Barbara Cartland once and she shared all her cakes with her dogs. She would pass them under the table.

Ok, that's twice today I heard of chickpea flour! I was watching molto mario from the food network here in the us. *(not sure if he is there in italy or not but you can find him on foodnetwork.com)* Anway... my point ... lol he made chickpea fritters using the paste saying how it was a Sicilian dish often found at the fry shops along with something he called sardine sausages... not a fan of the sardine at all whatsoever but the chickpea fritters looked as yummy as your appetizers!

Hi, Ellee. I don't think they're like mince pies but I did use my mince pie cutter on them! No, not for Simi. She has plenty of other doggie treats, though. Tea with BC - you should post on that! I do put weight on, btw - but I can get it off again when I put my mind to it! Janejill, I think they are mostly healthy. M, I will look for molto Mario. Chickpea fritters are very popular and delicious!
