THANKS, KATHY!

Besides creating recipes, I love adapting recipes and making them "my own". I love it even more when I hear that someone has adapted a recipe of mine! My friend Kathy of The Garden Cat Cottage has done just that with my chicken and aubergine recipe and she is so clever that she has made this video of the process:



I think it's a great idea to make this in a crock pot [slow cooker] and I'm going to add zucchini next time I make it. Aren't Kathy's dogs cute, too?

I had done it with your photo and recipe. It was easy and super good! Like you, I'll add zucchini next time. The video is fun.

I'm going to try a rhubarb and ginger baked alaska. Cut a ginger slab cake in half and put rhubarb & ginger jam and rhubarb or ginger ice cream in the middle. Replace the top and coat with meringue mixture. Put it in a very hot oven for 5 minutes and serve immediately.

My twenty-year-old crock pot died a year ago and I just replaced it. I love slow cooker recipes and the aroma that always permeates the house!!!

You can't stew zucchini, you have to lightly fry it in olive oil

Hello, WWW. Yes, that is what I would do too. But Kathy's method obviously works well for her. We are all free to interpret recipes as we like.
