FOCACCIA ALLA SALVIA


Surprised and delighted to be invited to lunch with friends again tomorrow, I had to think rather quickly about what I could take them. They always say I needn't and I know that, bless them, but the fact is I want to!

This afternoon it occurred to me that I hadn't made bread for ages and a quick flick through one of my favourite tomes, Bread by Ursula Ferrigno and Eric Treuille, revealed that I could make this sage bread [a variation on their olive focaccia] with ingredients I already had in. Well, I suppose my version is a more general herb bread, really, as I kept in the thyme and oregano in the olive bread recipe. It smelt rather as if it were something stuffed with Paxo during baking but it looks good and my "test piece" tasted good! [Yes, I did one half of the top as a salt crust and left the salt off the other in an effort to please everybody.]

I made bread today, but your looks like you left it outside and leaves blew all over it....
