FIORI DI ZUCCA ALLA MANTOVANA



In yet another homage to Mantova, I enjoyed making this dish of courgette flowers filled with a mixture of ham, grana cheese, parsley, garlic and, surprisingly, mashed potato.  The mixture is flavoured with nutmeg.  I cannot give you the whole, copyright recipe here but I do have one tip for you if you are going to make a similar dish:  make a normal amount of mashed potato and eat the rest as comfort food!

  1. I have always been fascinated by stuffed squash flowers but have never tried to make them. I think I will this summer! thanks for the reminder.

  2. I am anticipating for these to appear at our weekly open market soon. Hopefully I'll find only the flowers...the last time they had baby zukes with the flowers attached that were selling for 5€ a flat. Not a bad price at all but seeing that they would need to be used right away, I wasn't sure that we could eat a whole box of them at one go!

  3. Hehehe Looks like someone loves mashed potatoe! I've never made them this way either. I usually chop them and make them into fritters with egg, flour, cheese and a little water.I'm sure I'd love them your way!

  6. I was at a farmer's market last week where they had all these lovely edible flowers for sale - at outrageous prices. I did not buy any!
